Whereas in China liquorice is used mostly as a spice, in Europe it is mostly enjoyed as a sweet made from the press juice of the root – a delicacy that you either love or hate.

The same goes for star anise, a star-shaped fruit that grows on an evergreen tree in Asia, all the way from China to Vietnam. Star anise is very popular in Asian cuisines these days; for example, it is the ingredient that lends the Vietnamese soup Pho Bo its very typical taste.

But fennel, too, elicits a variety of reactions. Fennel seeds have an intense and slightly sweet taste, with the pungent seeds in particular frequently used in Indian and Chinese dishes.
