“Gyuokuro” means “precious dewdrop” in Japanese. In Japan, this tea is served in honour of guests and on special occasions. The extraction of this high-quality tea cannot merely be called tea cultivation, but is an art in itself. Our Supreme Gyokuro is covered with shade mats as soon as the first plants start sprouting at the end of April. For the next 21 days it is cultivated exclusively in full shade. Only the softest and most tender leaves are eventually used for making Gyokuro. The lack of light stimulates the production of chlorophyll and L-theanine. In addition, shading causes less tannin and bitter compounds to be produced than, for example, in sencha.“Umami” is a Japanese word that refers to a quality of our sense of taste in addition to sweet, sour, salty and bitter. The taste of “umami” can be described as “spicy” or “tasty”.
